Ingredients:

Prepare Hari Mirch Mong Phali Chutney (Thecha):

-Cooking oil 1-2 tbs

-Zeera (Cumin seeds) 1 tsp

-Hari mirch (Green chillies) 10-12

-Lehsan (Garlic) cloves 12-15

-Mong phali (Peanuts) roasted ¼ Cup

-Namak (Salt) ¼ tsp or to taste

-Lal mirch (Red chilli) crushed ½ tsp

Prepare Bajre ki Roti:

-Bajre ka atta (Millet flour) sifted 4 Cups

-Namak (Salt) 1 & ½ tsp

-Water 2 Cups or as required

-Makhan (White butter) as required

 

Directions:

Prepare Hari Mirch Mong Phali Chutney (Thecha):

-In a frying pan,add cooking oil,cumin seeds,green chillies,garlic & mix well.

-Add peanuts,mix well & fry until light golden (1-2 minutes).

-Transfer to a mortal & pestle,add salt,red chilli crushed & crush coarsely.

Prepare Bajre ki Roti:

-In a bowl,add millet flour,salt & mix well.

-Gradually add water,mix well & knead until dough is formed.

-Don’t rest the dough & make roti immediately after kneading the dough.

-Take a small quantity (170g) & make a smooth ball.

-On a butter paper,place dough ball,sprinkle millet flour & spread with the help of fingers (6-inch).

-Heat griddle,place rolled dough & cook on low flame from both sides until light golden (3-4 minutes).

-Add white butter & cook from both sides (makes 4).

-Serve bajre ki roti with white butter,hari mirch mong phali chutney!
