Ingredients:

  • Kaleji (Mutton liver) cubes ½ kg
  • Sirka (Vinegar) 1 tbs
  • Dahi (Yogurt) whisked 1/3 Cup
  • Cooking oil ¼ Cup
  • Lehsan (Garlic) crushed 1 & ½ tbs
  • Adrak (Ginger) crushed 1 tbs
  • Zeera (Cumin seeds) ½ tbs
  • Tamatar (Tomato) chopped 2 medium
  • Lal mirch powder (Red chilli powder) 1 tsp or to taste
  • Lal mirch (Red chilli) crushed 1 tsp
  • Haldi powder (Turmeric powder) ½ tsp
  • Sabut dhania (Coriander seeds) roasted & crushed 1 tbs
  • Cream 2-3 tbs
  • Namak (Salt) ½ tsp or to taste
  • Garam masala powder ½ tsp
  • Kasuri methi (Dried fenugreek leaves) 1 tbs
  • Hara dhania (Fresh coriander) chopped 1-2 tbs
  • Hari mirch (Green chilli) sliced
  • Adrak (Ginger) julienne

Directions:

In a bowl,add mutton liver,vinegar & mix well.

Add yogurt,mix well & marinate for 20 minutes.

In a wok,add cooking oil,garlic,ginger and mix well.

Add cumin seeds,mix well and fry ginger garlic until golden.

Now add marinated liver,mix well & cook on medium low flame for 6-8 minutes.

Add tomatoes & mix well.

Add red chilli powder,red chilli crushed,turmeric powder,coriander seeds,mix well,cover & cook on low flame for 4-5 minutes then cook on medium flame until oil separates.

Lower the flame,add cream & mix well.

Add salt,garam masala powder,dried fenugreek leaves & mix well.

Add fresh coriander & mix well.

Garnish with green chilli,ginger & serve.
