Ingredients:

-Tamatar (Tomatoes) 3 medium

-Dahi (Yogurt) 1 Cup (room temperature)

-Cream 2 tbs

-Lal mirch powder (Red chilli powder) ½ tbs or to taste

-Dhania powder (Coriander powder) 1 tbs

-Haldi powder (Turmeric powder) ½ tsp

-Cooking oil 1/3 Cup

-Zeera (Cumin seeds) 2 tsp

-Tez patta (Bay leaf) 1

-Tinday (Round gourd) 1 kg (cut in small pieces)

-Pyaz (Onion) sliced 1 large

-Adrak (Ginger) crushed 1 tbs

-Lehsan (Garlic) crushed 1 tbs

-Hari mirch (Green chillies) 4-5

-Namak (Salt) 1 tsp or to taste

-Hara dhania (Fresh coriander) chopped 2 tbs

-Kali mirch (Black pepper) crushed ½ tsp

-Kasuri methi (Dried fenugreek leaves) 1 tsp

-Hara dhania (Fresh coriander) chopped

-Hari mirch (Green chilli) sliced

 

Directions:

-In a chopper,add tomatoes,chop well & set aside.

-In a bowl,add yogurt,cream,red chilli powder,coriander powder,turmeric powder,whisk well & set aside.

-In a wok,add cooking oil,cumin seeds,bay leaf & mix well.

-Add round gourd,onion,mix well & cook on medium flame for 1-2 minutes.

-Add ginger,garlic,green chillies,salt,mix well & cook for 6-8 minutes.

-Add pureed tomatoes,mix well & cook on medium flame until oil separates (6-8 minutes).

-Now add prepared yogurt mixture,mix well & cook on low flame for 4-5 minutes.

-Add fresh coriander & mix well.

-Add black pepper crushed,dried fenugreek leaves & mix well,cover & cook on low flame until tender (18-20 minutes).

-Add fresh coriander & green chilli.

-Garnish with fresh coriander,green chilli & serve!
