Mix Vegatable Achar (Pickle)

Ingredients:

  • Boiling water
  • Gajar (Carrots) 400 gms
  • Phool gobhi (Cauliflower) Florets 250 gms
  • Hari mirch (Green chilies) 6-8 (Optional)
  • Hara lehsan (Green garlic) 1 Cup
  • Namak (Salt) ½ tbs or to taste
  • Haldee powder (Turmeric powder) 1 tsp
  • Lal mirch (Red chili) Crushed 1 tbs or to taste
  • Rai dana (Mustard seeds) Crushed 2-3 tbs
  • Sirka (Vinegar) 1 Cup
  • Pani (Water) 2-3 Cups (boiled and brought to room temperature)

Directions:

In boiling water,blanch carrots for 3 minutes and blanch cauliflower for 1-2 minute, strain and dry all vegetables.

In jar,add carrots,cauliflower,green chilies,green garlic,salt,turmeric powder,mustard seeds crushed,red chili crushed and vinegar and mix well.

Cover with lid and let it sit for 24 hours (Preferably in sunlight).

Add water (boiled), cover and leave it for 3 days (shake well occasionally).

Mix vegetable pickle is ready to use.
