Ingredients:

  • Palak (Spinach) 8-10 leaves
  • Hari mirch (Green chillies) 2
  • Pyaz (Onion) 1 medium
  • Tamatar (Tomatoes) 2 medium
  • Podina (Mint leaves) 8-10 leaves
  • Cooking oil 2 tbs
  • Lal mirch powder (Red chilli powder) 1 tsp or to taste
  • Namak (Salt) ½ tsp or to taste
  • Haldee powder (Turmeric powder) ¼ tsp
  • Kali mirch powder (Black pepper powder) ½ tsp
  • Anday (Eggs) 3
  • Podina (Mint leaves) chopped
  • Hari mirch (Green chilli)

Directions:

Chop spinach leaves,green chillies,onion,tomatoes,mint leaves & set aside.

In a frying pan,add cooking oil,onion and sauté until translucent.

Add green chillies and mix well.

Add tomatoes and mix well,cover & cook on low flame until tomatoes are soft (approx. 2-3 minutes).

Add red chilli powder,salt,turmeric powder,black pepper powder and mix well.

Add spinach leaves,mint leaves,mix well and cook for a minute.

Add eggs one by one,mix well and cook on low flame for 4-5 minutes.

Add mint leaves & mix.

Garnish with green chilli & fresh coriander & serve!
