Lemon Cupcakes:

  • Maida (All-purpose flour) 2 Cups
  • Namak (Salt) ½ tsp
  • Baking powder 1 tsp
  • Makhan (Butter) 250 gms (Room temperature)
  • Cheeni (Caster sugar) 1 & ½ Cup
  • Anday (Eggs) 4 (Room temperature)
  • Lemon juice 2 tsp
  • Lemon zest 2 tbs
  • Vanilla essence ½ tsp
  • Doodh (Milk) ½ Cup
  • Yellow food color 2-3 Drops

Lemon Buttercream Icing:

  • Makhan (Butter) 250 gms (Room temperature)
  • Icing sugar (Cheeni) 3 Cups
  • Lemon zest ½ tbs
  • Lemon juice 2 tbs
  • Yellow food color as required


For Lemon Cupcakes:

In bowl,sift together the all-purpose flour,salt and baking powder,mix dry ingredients and set aside.

In mixer machine,add butter and caster sugar,beat until its light and fluffy.

During beating, add eggs one at a time, beating well after each addition.

Add lemon juice,lemon zest,vanilla essence and add dry ingredients gradually.

Add milk,yellow food color and mix everything until it is a smooth mixture.It makes 18-20 cupcakes.
Take baking tray,place cupcake linings and add batter,tap cupcake tray 2-3 times on counter to eliminate air bubbles from batter and bake in preheated oven at 180 C for 15 to 20 minutes

For Lemon buttercream icing:

In mixer machine,add butter and beat until butter become light and changes color.

Gradually add icing sugar and beat well until all combined.

Add lemon zest,lemon juice and yellow food color,beat well.

Put the cupcakes on a cooling rack to cool,when they have finished cooling, pipe or spread the lemon buttercream icing over the cupcakes and garnish with multi sprinkles.
