Baisan Potato Squares

Ingredients:

-Aloo (Potatoes) 2 large

-Boiling water as required

-Baisan (Gram flour) 2 Cups

-Himalayan pink salt 1 tsp or to taste

-Zeera (Cumin seeds) roasted & crushed 1 tsp

-Lal mirch powder (Red chilli powder) 1 tsp or to taste

-Haldi powder (Turmeric powder) ½ tsp

-Sabut dhania (Coriander seeds) crushed 1 tbs

-Ajwain (Carom seeds) ¼ tsp

-Adrak lehsan paste (Ginger garlic paste) 1 & ½ tsp

-Water 3 Cups

-Hari mirch (Green chilli) chopped 1 tbs

-Pyaz (Onion) chopped ½ Cup

-Hara dhania (Fresh coriander) chopped ½ Cup

-Cooking oil 4 tbs

-Chaat masala

 

Directions:

-Grate potatoes with the help of the grater & set aside.

-In boiling water,place strainer,add grated potatoes & blanch on medium flame for 3 minutes,strain & set aside.

-In a wok,add gram flour,pink salt,cumin seeds,red chilli powder,turmeric powder,coriander seeds,carom seeds,ginger garlic paste,water & whisk until well combined.

-Turn on the flame,mix continuously & cook on low flame until dough is formed (6-8 minutes).

-Turn off the flame,add green chilli,onion,blanched potatoes,fresh coriander & mix well.

-Turn on the flame & cook on medium flame for 1-2 minutes.

-On greased tray,add prepared mixture & spread evenly with the help of greased spoon.

-Let it cool at room temperature & refrigerate for 10 minutes.

-Cut into squares pieces with the help of cutter.

-In a frying pan,add cooking oil & shallow fry on medium flame from both sides until golden.

-Baisan potato squares can be air fried in preheated air fryer at 180C for 8-10 minutes.

-Sprinkle chaat masala & serve with tomato ketchup!
