Ingredients:

-Boneless beef cubes 750g (without fat)

-Hari mirch (Green chillies) 5-6

-Lehsan (Garlic) sliced 4-5 cloves

-Adrak (Ginger) 2-inch piece

-Hara dhania (Fresh coriander) handful

-Himalayan pink salt 1 tsp or to taste

-Lal mirch (Red chilli) crushed 1 tsp

-Sabut dhania (Coriander seeds) crushed 1 tbs

-Zeera (Cumin seeds) roasted & crushed ½ tbs

-Garam masala powder ½ tsp

-Pyaz (Onion) grated 2 medium

-Ghee (Clarified butter) 1 tbs

-Breadcrumbs 2 tbs or as required

-Cooking oil 1-2 tbs

-Ghee (Clarified butter) ½ Cup

-Badiyan ka phool (Star anise) 2

-Laung (Cloves) 2

-Badi elaichi (Black cardamom) 1

-Zeera (Cumin seeds) 1 tsp

-Pyaz (Onion) sliced 2 large

-Adrak lehsan paste (Ginger garlic paste) 1 tbs

-Hari mirch (Green chilli) paste 2 tbs

-Tamatar (Tomato) chopped 1 medium

-Dahi (Yogurt) whisked 1 Cup

-Himalayan pink salt 1 tsp or to taste

-Zeera powder (Cumin powder) 1 tsp

-Lal mirch (Red chilli) crushed 1 tsp

-Dhania powder (Coriander powder) 1 tsp

-Jaifil powder (Nutmeg powder) ¼ tsp

-Haldi powder (Turmeric powder) ¼ tsp

-Javitri powder (Mace powder) ¼ tsp

-Garam masala powder ½ tsp

-Water ¼ Cup or as required

-Olper’s Cream 1 Cup (room temperature)

-Hara dhania (Fresh coriander) chopped 1-2 tbs

-Podina (Mint leaves) chopped 1-2 tbs

-Chawal (Rice) 500g (boiled with salt & whole spices)

-Hari mirch (Green chillies) 2-3

-Podina (Mint leaves) chopped

 

Directions:

-In a bowl,beef,green chillies,garlic,ginger,fresh coriander,pink salt,red chilli crushed,coriander seeds, cumin seeds & garam masala powder.

-On muslin cloth,add onion & squeeze out excess water.

-In beef mixture,add squeezed onion & mix well.

-In chopper,add beef mixture & chop until well combined.

-Take out in a bowl,add clarified butter,breadcrumbs & knead mixture well until combined,cover & refrigerate for 30 minutes.

-Take a small quantity of mixture (100g) with the help of wet hands & skew it in a wooden skewer.

-On a non-stick griddle,add cooking oil & fry kababs on medium flame from all sides until done.

-Cut kababs in half & set aside.

-In a pot,add clarified butter & let it melt.

-Add star anise,cloves,black cardamom,cumin seeds & mix well.

-Add onions,mix well & fry until light golden.

-Add ginger garlic paste,green chilli paste,tomato,mix well & cook for 2-3 minutes.

-Add yogurt,pink salt,cumin powder,red chilli crushed,coriander powder,nutmeg powder,turmeric powder,mace powder,garam masala powder,mix well & cook for 1-2 minutes.

-Add water,mix well & cook until oil separates.

-Turn off the flame,add cream & mix well.

-Turn on the flame,add seekh kababs & mix gently.

-Add fresh coriander,mint leaves,rice & spread evenly.

-Add green chillies,mint leaves & make holes with wooden spoon,cover with kitchen cloth,lid & steam cook on low flame for 12-15 minutes.

-Serve with yogurt raita!
