Ingredients:

  • Whole chicken 1 & ½ kg
  • Dahi (Yogurt) whisked ½ Cup
  • Adrak lehsan paste (Ginger garlic paste) 1 tbs
  • Lahori charga masala 4-5 tbs
  • Zarda ka rang (Yellow food color) 1/4 tsp (optional)
  • Lemon juice 2 tbs
  • Cooking oil 2 tbs
  • Boiling water as required
  • Cooking oil for frying
  • Ghee 3-4 tbs
  • Zeera (Cumin seeds) ½ tsp
  • Laung (Cloves) 2
  • Badi elaichi (Black cardamom) 1
  • Hari elaichi (Green cardamom) 2
  • Darchini (Cinnamon sticks) 2
  • Sabut kali mirch (Black peppercorns) 3-4
  • Pyaz (Onion) sliced 2-3 large
  • Tamatar (Tomatoes) sliced 3 medium
  • Adrak lehsan paste (Ginger garlic paste) 1 tsp
  • Hari mirch (Green chilli) crushed 1-2 tbs
  • Dahi (Yogurt) whisked 1 Cup
  • Lahori charga masala 2 tbs
  • Haldee powder (Turmeric power) ½ tsp
  • Javatri powder (Mace powder) 1/4 tsp
  • Jaifil powder (Nutmeg powder) 1/4 tsp
  • Aloo bukhara (Dried plums) 3-4
  • Chawal (Rice) 750 g (soaked & boiled with salt& whole spices until 3/4th done)
  • Zarda ka rang (Yellow food color) 1/4 tsp or as required
  • Podina (Mint leaves) chopped 1-2 tbs
  • Hara dhania (Fresh coriander) chopped 1-2 tbs
  • Hari mirch (Green chilli) 3-4

Directions:

Add cuts on whole chicken & set aside.

In bowl,add yogurt,ginger garlic paste,lahori charga masala,yellow food color,lemon juice,cooking oil and whisk well.

Add whole chicken,rub marination evenly and marinate for 3-4 hours in refrigerator.

In pot,add boiling water,place steam rack and marinated chicken,cover and steam cook on low flame for 30-35 minutes.

In wok,heat cooking oil and fry charga on medium flame from both sides until golden brown.

In frying pan,add ghee and let it melt.

Add cumin seeds,cloves,black cardamom,green cardamom,cinnamon sticks,black peppercorns and mix.

Add onion and fry until golden brown.

Add tomatoes and mix.

Add ginger garlic paste,green chilli and mix well.

Add yogurt and mix well.

Add lahori charga masala,turmeric powder,mace powder,nutmeg powder,dried plums,mix well and cook for 2-3 minutes.

In pot,add prepared gravy,boiled rice,yellow food color,mint leaves,fresh coriander,green chillies,fried charga,cover and simmer on low flame for 8-10 minutes & serve!
