Prepare Orange Glaze:

-Orange juice 1 & ½ Cup

-Sugar 3-4 tbs

-Adrak (Ginger) julienne 1 inch piece

-Orange peel julienne 1 tsp

-Lal mirch (Red chilli) crushed 1 tsp

-Himalayan pink salt 1 pinch or to taste

-Cornflour 2 tsp or as required

Prepare Crispy Beef & Veg Filling:

-Cooking oil 2-3 tbs

-Boneless beef strips 350g (undercut)

-Lehsan (Garlic) finely chopped 1 tbs

-Adrak (Ginger) julienne 1 tbs

-Himalayan pink salt ½ tsp or to taste

-Kali mirch powder (Black pepper powder) 1 & ½ tsp

-Paprika powder 1 tsp

-Mustard paste 1 & ½ tsp

-Soy sauce 2 tbs

-Pyaz (Onion) sliced ½ Cup

-Shimla mirch (Capsicum) julienne ½ Cup

-Gajar (Carrot) julienne ½ Cup

-Corn kernels boiled ½ Cup

-Maida (All-purpose flour) 1 tbs

-Water 2 tbs

-Spring roll sheets as required

-Cooking oil 3-4 tbs



Prepare Orange Glaze:

-In a saucepan,add orange juice,sugar,ginger,orange peel,red chilli crushed,pink salt,cornflour & mix well.

-Turn on the flame & cook on low flame until it thickens (3-4 minutes) & set aside.

Prepare Crispy Beef & Veg Filling:

-In a wok,add cooking oil,beef & mix well until it changes color then cook on high flame until it dries up (5-6 minutes).

-Add garlic,ginger & mix well.

-Add pink salt,black pepper powder,paprika powder,mustard paste,soy sauce,mix well & cook for 1-2 minutes.

-Add onion,capsicum,carrot,corn kernels,2 tbs of prepared orange glaze,mix well & cook on high flame for a minute & let it cool.

-In all-purpose flour,add water & whisk well.Flour slurry is ready.

-Take spring roll sheet,add prepared crispy beef & veg filling,fold over the sides,roll up & apply all-purpose flour slurry.

-Prepare the remaining rolls similarly (makes 10-12).

-Can be stored in an airtight container for up to 1 month in freezer.

-In frying pan,add cooking oil & shallow fry rolls from all sides until golden brown.

-Apply prepared orange glaze on fried rolls & serve with orange glaze!
