Sooji Veg Pancakes

Ingredients:

-Pyaz (Onion) ½ Cup

-Shimla mirch (Capsicum) ¼ Cup

-Gajar (Carrot) peeled ½ Cup

-Lauki (Bottle gourd) peeled 1 Cup

-Adrak (Ginger) 1-inch piece

-Dahi (Yogurt) 1/3 Cup

-Sooji (Semolina) 1 & ½ Cup

-Zeera (Cumin seeds) roasted & crushed 1 tsp

-Himalayan pink salt 1 tsp or to taste

-Lal mirch (Red chilli) crushed 1 tsp

-Water 1 Cup

-Hari mirch (Green chilli) chopped 1 tbs

-Hara dhania (Fresh coriander) chopped handful

-Baking soda ½ tsp

-Cooking oil 2-3 tbs

-Til (Sesame seeds) as required

-Cooking oil 1-2 tsp if required

 

Direction:

-Chop onion & capsicum.

-Grate carrot,bottle gourd,ginger & set aside.

-In a bowl,add yogurt,semolina,cumin seeds,pink salt,red chilli crushed,water & whisk well,cover & let it rest for 10 minutes.

-Add all vegetables,green chilli,fresh coriander,baking soda & mix well.

-In a small frying pan (6-inches),add cooking oil & heat it.

-Add sesame seeds,prepared batter & spread evenly,cover & cook on low flame until golden (6-8 minutes),flip carefully,if required add cooking oil & cook on medium flame until its done (3-4 minutes) (makes 4) & serve!
