Fusion Patakha Chicken

So many people asked us for this Fusion Patakha Chicken recipe. So finally here it is. This is our Fusion version of the recipe in which we tried to add our own touch to it while maintain the gist of the Nathia Gali Patakha Chicken we all know. Prepare Patakha Spice Mix:

-Anardana (Dried pomegranate seeds) 2 & ½ tbs

-Jaifil (Nutmeg) ¼ piece

-Laung (Cloves) 7-8

-Javitri (Mace) 2 blades

-Zeera (Cumin seeds) 1 & ½ tbs

-Sabut dhania (Coriander seeds) 2 tbs

-Lal mirch (Red chilli) crushed 4 tbs

-Lehsan powder (Garlic powder) ½ tbs

-Kala namak (Black salt) 1 tsp

-Amchor powder (Dried mango powder) 1 tbs

-Namak (Salt) 1 tsp or to taste

-Tatri (Citric acid) ½ tsp

-Kashmiri lal mirch (Kashmiri red chilli) powder 1 & ½ tbs

-Ajwain (Carom seeds) crushed ½ tsp

-Whole chicken approx. 1.5 kg

-Dahi (Yogurt) whisked ½ Cup

-Chilli sauce 2 tbs

-Soy sauce 3 tbs

-Adrak lehsan paste (Ginger garlic paste) 2 tbs

-Namak (Salt) ½ tsp or to taste

-Lemon juice 1 tbs

-Zarda ka rang (Orange food color) ¼ tsp

-Cornflour 3 tbs

-Cooking oil for frying



Prepare Patakha Spice Mix:

-In a spice mixer,add dried pomegranate seeds,nutmeg,cloves,mace,cumin seeds,coriander seeds & grind well.

-Take out in a bowl,add red chilli crushed,garlic powder,black salt,dried mango powder,salt,citric acid, Kashmiri red chilli powder,carom seeds & mix well.Patakha spice mix is ready!

-Pat dry chicken with the help of kitchen tissue paper.

-Make deep cuts in whole chicken from both sides & set aside.

-In a bowl,add yogurt,chilli sauce,soy sauce,ginger garlic paste,salt,lemon juice,orange food color, cornflour,half quantity of prepared Patakha spice mix & whisk until well combined.

-Add whole chicken,rub well & marinate for 6-8 hours or overnight in refrigerator.

-In a wok,heat cooking oil & fry marinated chicken on low flame from both sides until golden & pour hot oil in between over chicken (approx. 10 minutes).

-Takeout on a grill & let it rest for 10-20 minutes.

-Fry chicken again on medium flame until golden brown & crispy (8-10 minutes).

-Fry remaining spice mix for 8-10 seconds.

-Serve patakha chicken with fried patakha spice mix,yogurt raita,tomato chutney & onion slices!
