Prepare Potato Stuffing:

-Cooking oil 2 tbs

-Pyaz (Onion) chopped 1 Cup

-Adrak lehsan paste (Ginger garlic paste) 1 & ½ tsp

-Namak (Salt) ½ tsp or to taste

-Lal mirch powder (Red chilli powder) 1 tsp or to taste

-Amchor powder (Dried mango powder) 1 tsp

-Zeera (Cumin seeds) roasted & crushed 1 tsp

-Sabut dhania (Coriander seeds) crushed 1 tsp

-Aloo (Potatoes) boiled 2 medium

-Hari mirch (Green chilli) chopped 1 tbs

-Hara dhania (Fresh coriander) chopped 1 tbs

Prapare Hari Chutney Raita:

-Dahi (Yogurt) 1 & ½ Cup

-Hara dhania (Fresh coriander) half bunch

-Podina (Mint leaves) half bunch

-Lehsan (Garlic) 3-4 cloves

-Hari mirch (Green chillies) 5-6

-Zeera (Cumin seeds) 1 tsp

-Namak (Salt) ¼ tsp or to taste

-Kala namak (Black salt) ½ tsp

-Water 2-3 tbs or as required

-Lemon juice 2 tbs

Prepare Kachori:

-Maida (All-purpose flour) sifted 2-3 Cups

-Chawal ka atta (Rice flour) 2 & ½ tbs

-Namak (Salt) 1 tsp or to taste

-Ajwain (Carom seeds) 1 pinch

-Ghee (Clarified butter) 3-4 tbs

-Water 1 Cup or as required

-Cooking oil for frying


-Chanay (Chickpeas) boiled

-Meethi Chutney

-Pyaz (Onion) rings

-Chaat masala

-Lal mirch (Red chilli) crushed

-Nimco sev

-Anaar (Pomegranate seeds)



Prepare Potato Stuffing:

-In frying pan,add cooking oil,onion & sauté until translucent.

-Add ginger garlic paste & mix well.

-Add salt,red chilli powder,dried mango powder,cumin seeds,coriander seeds,mix well & cook for 1-2 minutes.

-Add potatoes & mix well.

-Turn off the flame & mash well with the help of masher.

-Turn on the flame & mix well.

-Add green chilli,fresh coriander,mix well & cook for a minute.

-Let it cool.

Prapare Hari Chutney Raita:

-In a blender jug,add yogurt,fresh coriander,mint leaves,garlic,green chillies,cumin seeds,salt,black salt,water,lemon juice,blend well & set aside.

Prepare Kachori:

-In a bowl,add all-purpose flour,rice flour,salt,carom seeds & mix well.

-Add clarified butter & mix well until it crumbles.

-Gradually add water,mix well & knead until dough is formed,cover & let it rest for 15 minutes.

-Knead dough again until smooth.

-Take a small dough (30g) & make a ball.

-Take small quantity of potato stuffing and place in the center of the dough then fold & seal all edges to make a ball.

-Grease working surface with cooking oil & spread the dough with the help of fingers.

-In a wok,heat cooking oil & fry kachori on low flame until golden & crispy (makes 19-20).


-On serving plate,break puri & add chickpeas,hari chutney raita,meethi chutney,onion rings,chaat masala, red chilli crushed,nimco sev,pomegranate seeds & serve!
