Ingredients:

Prepare Podina Spice Mix:

  • Podina (Mint leaves) 1 bunch or as required
  • Zeera (Cumin seeds) roasted & crushed 1 tbs
  • Sabut dhania (Coriander seeds) roasted & crushed 1 tsp
  • Lal mirch powder (Red chilli powder) 1 tsp or to taste
  • Chaat masala 1 & ½ tsp
  • Namak (Salt) ½ tsp or to taste

Prepare Dough:

  • Dahi (Yogurt) 3 tbs
  • Namak (Salt) 1 tsp or to taste
  • Zeera (Cumin seeds) roasted & crushed 1 tsp
  • Podina (Mint leaves) chopped handful
  • Water 1 & ½ Cup or as required
  • Fine atta (Fine flour) sifted 3 Cups
  • Olper’s Tarrka Desi Ghee 1 tbs or as required

Directions:

Prepare Podina Spice Mix:

Microwave mint leaves for 2-3 minutes on medium power (1 minute at a time) then crush them with the help of hands.

In a bowl,add crushed mint leaves (approx. 2 tbs),cumin seeds,coriander seeds,red chilli powder,chaat masala,salt,mix well & set aside.

Prepare Dough:-In a bowl,add yogurt,salt,cumin seeds,mint leaves,water & mix well.

Add fine flour,mix well & knead until dough is formed.

Add ghee & knead again.

Grease dough with ghee,cover & let it rest for 15 minutes.

-Take a small dough (120g),make a ball,sprinkle dry flour & roll out with the help of rolling pin.

Add & spread ghee & sprinkle prepared mint spice mix.

Cut dough from the center,pick one side of the dough,twist & roll to make a cone,pinch & seal the ends of dough & press gently to make a dough ball.

Grease dough balls with ghee,cover & let them rest for 10-15 minutes.

Sprinkle dry flour & roll out the dough ball with the help of rolling pin.

On heated griddle,place paratha,add ghee & fry paratha from both sides until done (makes 6).

Serve with yogurt!
