Eid Special Bombay Bakery Inspired Chocolate Cake

Ingredients:

Prepare Buttercream Frosting:

-Nurpur butter unsalted 150g soft

-Milk powder1/3 Cup

-Vanilla essence ½ tsp

-Icing sugar 2 Cups

-Whipping cream 1 & ½ tbs

Prepare Chocolate Frosting:

-Cocoa powder 4-5 tbs

-Whipping cream 3 & ½ tbs

Prepare Chocolate Cake:

-Maida (All-purpose flour) 2 Cups

-Cocoa powder 4 tbs

-Instant coffee 2 tsp

-Baking powder 2 & ½ tsp

-Himalayan pink salt ½ tsp

-Nurpur butter unsalted 200g soft

-Bareek cheeni (Caster sugar) 200g (1 Cup)

-Vanilla essence 2 tsp

-Anday (Eggs) 5

-Doodh (Milk) ¼ Cup

-Sugar syrup (dissolve 4-5 tbs of sugar in 1 Cup water)

-Badam (Almonds) chopped

 

Directions:

Prepare Buttercream Frosting:

-In a kneading machine,add butter,milk powder,vanilla essence,gradually add icing sugar & beat well for 8-10 minutes.

-Add whipping cream & beat for 2 minutes.

-Take out 1/3rd potion of icing mixture in a piping bag & refrigerate until use.

Prepare Chocolate Frosting:

-In a small bowl,add cocoa powder,whipping cream & mix well.

-Now add this mixture in remaining white icing & beat until well combined then transfer to a piping bag & refrigerate until use.

Prepare Chocolate Cake:

-On a bowl,place a sieve,add all-purpose flour,cocoa powder,instant coffee,baking powder,pink salt & sift well then mix well & set aside.

-In a kneading machine,add butter & beat well for 6-8 minutes.

-Add caster sugar,vanilla essence & beat well for 3 minutes.

-Gradually add eggs one by one & beat well.

-Gradually add flour mixture,milk & beat until well combined.

-Grease 8-inch round baking pan with butter & line it with butter paper.

-Pour cake batter,spread evenly & tap few times.

-Bake in preheated oven at 170C for 50 minutes or until skewer comes out clean.

-Let it cool.

-Remove cake from baking pan and with the help of the cake knife,horizontally cut two layers of cake.

-Place first layer of cake on cake stand,add sugar syrup,add & spread buttercream frosting.

-Place another layer of cake,add sugar syrup,add prepared chocolate frosting & cover the sides of the cake with frosting.

-Apply chopped almonds on the sides of the cake.

-Refrigerate until chilled.

-Cut into desired slices & serve!
