Breakfast Egg Burritos

Ingredients:

  • Prepare Homemade Tortilla:
  • Sunridge super fine atta (Flour) sifted 3 Cups
  • Namak (Salt) 1 tsp or to taste
  • Baking powder ¼ tsp
  • Lukewarm water 1 Cup or as required
  • Cooking oil ½ tbs

Prepare Sour Cream Sauce:

  • Cream ¾ Cup
  • Lemon juice 1 tbs
  • Paprika powder ½ tsp
  • Kali mirch powder (Black pepper powder) ½ tsp
  • Namak (Salt) ¼ tsp or to taste
  • Hara dhania (Fresh coriander) finely chopped 1-2 tbs
  • Soya (Dill) chopped 1-2 tbs
  • Doodh (Milk) 4 tbs

Prepare Scrambled Egg:

  • Anday (Eggs) 3
  • Namak (Salt) ¼ tsp or to taste
  • Kali mirch (Black pepper) crushed ¼ tsp
  • Doodh (Milk) 2 tbs
  • Cooking oil 1 tbs

Prepare Veggies:

  • Cooking oil 1 tbs
  • Shimla mirch (Capsicum) julienne 1 Cup
  • Tamatar (Tomatoes) deseeded & sliced 2 medium
  • Pickled red jalapenos sliced ¼ Cup
  • Namak (Salt) to taste
  • Kali mirch powder (Black pepper powder) to taste

Assembling:

  • Tortilla
  • Prepared sauce
  • Scrambled egg
  • Sauteed veggies
  • Iceberg
  • Prepared sauce
  • Hot sauce

Directions:

Prepare Homemade Tortilla:

In a bowl,add super fine flour,salt,baking powder & mix well.

Gradually add lukewarm water,mix well & knead until dough is formed.

Add cooking oil and knead again,cover and let it rest for 30 minutes.

Sprinkle dry flour & knead dough well until its smooth & stretchy (5-6 minutes).

Sprinkle dry flour,take a small dough (100g),make a ball,sprinkle dry flour & roll out thin with the help of rolling pin (11-inch round).

Hot griddle,place rolled dough and cook each side for 30-40 seconds.

Place tortilla on kitchen towel,cover with a towel for 2 minutes or until use & set aside.

Prepare Sour Cream Sauce:

In a bowl,add cream,lemon juice & mix well for 30 seconds.Sour cream is ready!

Add paprika powder,black pepper powder,salt,fresh coriander,dill,milk & mix well,cover & let it rest until for 10 minutes & set aside.

Prepare Scrambled Egg:

In a bowl,add eggs,salt,black pepper crushed,milk & whisk well.

In a frying pan,add cooking oil,whisked eggs & cook on low flame while gently stir in between (makes for 1 burrito).

Prepare Veggies:

In the same frying pan,add cooking oil,capsicum,tomatoes,pickled red jalapenos,salt,black pepper powder,mix well & stir fry 1-2 minutes & set aside.

Assembling:

On a clean working surface,place a tortilla,add prepared sour cream sauce,scrambled egg,sauteed vegetables,iceberg,prepared sour cream sauce,hot sauce,fold all the sides & roll the tortilla.

Grease frying pan with cooking oil & fry burrito from all sides until golden brown (makes 4).

Wrap burritos in butter paper & serve!
