  • Aalo (Potatoes) large & peeled 750g
  • Chilled water with ice cubes as required
  • Makhan (Butter) 2 tbs
  • Lal mirch powder (Red chilli powder) 1 & ½ tsp or to taste
  • Namak (Salt) 1 tsp or to taste
  • Onion powder 1 tsp
  • Lehsan powder (Garlic powder) 1 tsp
  • Paprika powder ½ tsp
  • Kali mirch powder (Black pepper powder) 1 tsp
  • Cornflour 2 tbs
  • Maida (All-purpose flour) 2 tbs
  • Cheddar cheese grated ¼ Cup
  • Mozzarella cheese slices cut into triangles
  • Cooking oil for frying


In a bowl,grate potatoes with the help of grater.

Add chilled water with ice cubes,mix well & let it rest for 10-15 minutes.

On a bowl,place muslin cloth,add grated potatoes & squeeze out excess water completely & set aside.

In a wok,add butter & let it melt.

Add grated & squeezed potatoes,mix well & cook on medium flame until completely dries up (5-6 minutes) & stir continuously.

Let it cool.

Add red chilli powder,salt,onion powder,garlic powder,paprika powder,black pepper powder,cornflour, all-purpose flour,cheddar cheese & mix until well combined.

Grease hands with oil,take a small quantity of mixture (60g) & flat on your palm,place a triangle piece of mozzarella cheese slice and cover with remaining potato mixture,press gently & make a shape of triangle (makes 12) and freezer for 10 minutes.

In a frying pan,heat cooking oil & shallow fry on medium flame from both sides until golden brown.

Serve hash brown with egg,salad,bread slice & tea!
