  • Water 3 Cups or as required
  • Sirka (Vinegar) 1 & ½ tbs
  • Haldi powder (Turmeric powder) ½ tsp
  • Bakray ka maghaz (Mutton brain) 4 (400g)
  • Adrak lehsan paste (Ginger garlic paste) ½ tbs
  • Namak (Salt) ½ tsp or to taste
  • Lal mirch powder (Red chilli powder) 1 tsp or to taste
  • Zeera powder (Cumin powder) ½ tsp
  • Haldi powder (Turmeric powder) ½ tsp
  • Sabut dhania (Coriander seeds) crushed ½ tbs
  • Garam masala powder ¼ tsp
  • Kali mirch powder (Black pepper powder) ½ tsp
  • Maida (All-purpose flour) 1 tbs
  • Baisan (Gram flour) roasted 2 tbs
  • Hari mirch (Green chilli) chopped 2
  • Pyaz (Onion) chopped & squeezed 1 medium
  • Hara dhania (Fresh coriander) chopped 2 tbs
  • Breadcrumbs 1 Cup or as required
  • Cooking oil for frying


In a wok,add water,vinegar,turmeric powder & bring it to boil.

Add mutton brains,cover & boil on medium flame for 6-8 minutes.

Devein & chop well with the help of knife.

Take out in a bowl,add ginger garlic paste,salt,red chilli powder,cumin powder,turmeric powder, coriander seeds,garam masala powder,black pepper powder,all-purpose flour,gram flour,green chilli,onion,fresh coriander & mix until well combined.

Take a small quantity of mixture with the help of spoon,coat with breadcrumbs & make cutlets of equal sizes (makes 11-12).

In a frying pan,add cooking oil & fry cutlets on medium flame from both sides until golden brown.

Serve brain cutlets with chutney or tomato ketchup.
