-Water 3 Cups or as required

-Sirka (Vinegar) 1 & ½ tbs

-Haldi powder (Turmeric powder) ½ tsp

-Bakray ka maghaz (Mutton brain) 4 (400g)

-Adrak lehsan paste (Ginger garlic paste) ½ tbs

-Namak (Salt) ½ tsp or to taste

-Lal mirch powder (Red chilli powder) 1 tsp or to taste

-Zeera powder (Cumin powder) ½ tsp

-Haldi powder (Turmeric powder) ½ tsp

-Sabut dhania (Coriander seeds) crushed ½ tbs

-Garam masala powder ¼ tsp

-Kali mirch powder (Black pepper powder) ½ tsp

-Maida (All-purpose flour) 1 tbs

-Baisan (Gram flour) roasted 2 tbs

-Hari mirch (Green chilli) chopped 2

-Pyaz (Onion) chopped & squeezed 1 medium

-Hara dhania (Fresh coriander) chopped 2 tbs

-Breadcrumbs 1 Cup or as required

-Cooking oil for frying



-In a wok,add water,vinegar,turmeric powder & bring it to boil.

-Add mutton brains,cover & boil on medium flame for 6-8 minutes.

-Devein & chop well with the help of knife.

-Take out in a bowl,add ginger garlic paste,salt,red chilli powder,cumin powder,turmeric powder, coriander seeds,garam masala powder,black pepper powder,all-purpose flour,gram flour,green chilli,onion,fresh coriander & mix until well combined.

-Take a small quantity of mixture with the help of spoon,coat with breadcrumbs & make cutlets of equal sizes (makes 11-12).

-In a frying pan,add cooking oil & fry cutlets on medium flame from both sides until golden brown.

-Serve brain cutlets with chutney or tomato ketchup.
