Ingredients:

-Pyaz (Onion) fried ½ Cup

-Khopra (Desiccated coconut) 1 & ½ tbs

-Badam (Almonds) 12-15

-Javitri (Mace) 2-3 blades

-Sabut dhania (Coriander seeds) 1 tbs

-Saunf (Fennel seeds) 1 tsp

-Adrak powder (Dried ginger powder) 1 tsp

-Zafran (Saffron strands) ¼ tsp

-Olper’s Milk ½ Cup

-Ghee (Clarified butter) ½ Cup

-Boneless mutton 500g

-Adrak lehsan paste (Ginger garlic paste) 1 & ½ tbs

-Haldi powder (Turmeric powder) ½ tsp

-Himalayan pink salt 1 tsp or to taste

-Tamatar (Tomatoes) pureed 2 large

-Lal mirch powder (Red chilli powder) 2 tsp or to taste

-Tandoori masala 1 tbs

-Garam masala powder ½ tsp

-Dahi (Yogurt) whisked ½ Cup

-Water 2 Cups or as required

-Olper’s cream ½ Cup (room temperature)

-Hari mirch (Green chillies) sliced 3

-Adrak (Ginger) julienne 1-inch piece

-Hara dhania (Fresh coriander) chopped

-Olper’s cream

-Kaju (Cashew nuts)

-Hara dhania (Fresh coriander) chopped

 

Directions:

-In a grinder,add fried onion,desiccated coconut,almonds,mace,coriander seeds,fennel seeds,dried ginger powder,saffron strands,milk & grind well to make a thick paste & set aside.

-In a wok,add clarified butter & let it melt.

-Add mutton & mix well until it changes color.

-Add ginger garlic paste,turmeric powder,pink salt & mix well.

-Add pureed tomatoes,mix well & cook on medium flame for 2-3 minutes.

-Add red chilli powder,tandoori masala,garam masala powder & mix well.

-Add ground paste,yogurt,mix well & cook on medium flame for 8-10 minutes.

-Add water,mix well & bring it to boil,cover & cook on low flame until meat is tender (45-50 minutes),add more water if required.

-Turn off the flame,add cream & mix well.

-Turn on the flame & cook on low flame for 1-2 minutes.

-Add green chillies,ginger,fresh coriander,cover & cook on low flame for 4-5 minutes.

-Garnish with cream,cashew nuts,fresh coriander & serve!
