  • Pista (Pistachios) 5-6 tbs
  • Doodh (Milk) full cream 3 Cups
  • Sugar 1 Cup or to taste
  • Pistachio essence ½ tsp
  • Green food color 5-6 drops or as required
  • Cream 2 & ½ Cups
  • Pista (Pistachios) sliced


Coarsely chop pistachios on a clean cutting board with the help of knife & set aside.

In a wok,add milk & bring it to boil.

On low flame,add sugar,mix well & cook until sugar is dissolved.

Turn off the flame & let it rest for 1-2 minutes.

Add pistachio essence,green food color & mix well.

Add cream & whisk well until smooth.

Let it cool completely then strain icecream mixture with the help of the strainer.

Transfer the mixture to an airtight container,tap 2-3 times,cover the surface with cling film and lid & freeze overnight.

Take out from the freezer,remove cling film & let it rest for 2 minutes.

Cut ice cream into cubes with the help of the knife.

In chopper,add ice cream and process until smooth.

Add chopped pistachios & mix well.

Transfer the mixture into an airtight container,cover the surface with cling film and lid & freeze for 8 hours (yields: 1 litre).

Once frozen completely,scoop out,decorate with pistachios & serve!
