Shahi Gajrela

Ingredients:

-Gajar (Carrots) 1 kg

-Chawal (Rice) basmati ¼ Cup (soaked for 2 hours)

-Water ¼ Cup

-Doodh (Milk) 2 litres

-Sugar ¾ Cup or to taste

-Elaichi ke daane (Cardamom pods) crushed 8

-Badam (Almonds) sliced 2 tbs

-Pista (Pistachios) sliced 2 tbs

-Kewra water 1 tsp

-Olper’s Dairy Cream 1 Cup

-Pista (Pistachios)

 

Directions:

-In a bowl,grate carrots with the help of grater & set aside.

-In a grinder,add soaked rice,water & grind coarsely & set aside.

-In a pot,add milk & bring it to boil.

-Add grated carrots,ground rice and mix well,bring it to boil & cook on medium flame for 5-6 minutes,cover partially & cook on low flame for 18-20 minutes and keep stirring in between.

-Add sugar,cardamom seeds,almonds,pistachios,mix well & cook on medium flame until milk is reduced and thickened (5-6 minutes).

-Add kewra water & mix well

-Turn off the flame,add cream and mix well.

-Turn on the flame and cook for a minute.

-Garnish with pistachios & serve hot or chilled!
